Ingredients
2 packages Bowl & Basket mini yellow potatoes, peeled
1/2 cup butter
1/4 cup half and half
1 leek, white and light green parts cleaned and sliced thinly
5 cups sliced green cabbage
salt to taste
pepper to taste
Directions

1. Halve potatoes and place in a medium pot and cover with water by at least 1 inch. Bring pot to a boil and boil potatoes until tender, approximately 7-10 minutes.

 

2. Drain potatoes then return to pot along with half the butter and the half & half. Mash until smooth.

 

3. Meanwhile, add the rest of the butter to a large skillet and heat over medium heat. Add leek and green cabbage and sauté until cabbage has softened, about 4-5 minutes.

 

4. Mix cabbage mixture into the mashed potatoes and serve alongside corned beef, roasted sausages or desired main dish.
