Ingredients
1 Minute® Cilantro & Lime Rice Cup
1/2 tbsp olive oil
1 tbsp poblano pepper, chopped
1/4 cup spinach
1 tbsp onion, chopped
1 garlic clove, chopped
Directions

Step 1: Heat rice according to package directions.

Step 2: In a small pan, heat oil over medium heat. Add garlic to pan for 30 seconds or until fragrant. Add poblano pepper, spinach, onion, and garlic to the pan. Cook for about 2 minutes or until ingredients are softened.

Step 3: Place the ingredients from the pan into a blender with salt until smooth. Add a tbsp of water if needed.

Step 4: In small bowl combine the rice with the green sauce and serve.
