1 tablespoon olive oil
1 small onion, chopped
1 jalapeño pepper, sliced
2 (15-ounce) cans HORMEL® Chili
8 ounces campanelle pasta, uncooked
1 (15-ounce) can diced tomatoes, undrained
2 cups vegetable broth
1 cup shredded Cheddar cheese
Directions
1. In large Dutch-oven over medium heat, heat oil.
2. Add onion and jalapeño and cook 5 minutes or until onion is translucent.
3. Stir in chili and next 3 ingredients.
4. Bring mixture to a boil; reduce heat to medium- low. Simmer 20 minutes or until pasta is tender.
5. Stir in cheese.
