Baja Fish Tacos with Gorton's Fish Fillets and Mission Tortillas

1 4 Mission Flour tortillas
1 cup Corn Pico
8 Gorton’s fish sticks
1 cup Red Cabbage
1 avocado
1/4 cup crumbled queso fresco
1/4 cup pickled red onions
1/4 cup sriracha mayo
1 4 cups Roma tomatoes
4 cups black beans
4 cups charred corn
1 cup cilantro
1/2 cup lime juice
Salt, to taste
Pepper, to taste
Directions
FOR TACO:
- Slightly char the tortilla on high heat.
- Prepare fish sticks according to package directions.
- On top of the tortilla add sliced avocado, corn pico, 2 fish sticks, red cabbage, queso fresco and red onions.
- Drizzle with sriracha mayo.
FOR CORN PICO:
1. Mix all ingredients together and serve.
