1 1/2 lbs large fresh shrimp, unpeeled
1 cup fresh cilantro leaves
3 green onion, cut in thirds
1/2 cup freshly grated Parmesan cheese
1/2 jalapeño pepper, unseeded
1/2 tomato
2 Tbsps pine nuts, toasted
3 Tbsps fresh lemon juice (about 1 lemon)
1 tsp minced garlic
1/2 tsp salt
1/2 tsp pepper
1/4 cup olive oil, divided
Directions

Step 1: Prepare rice according to package directions; keep warm.

Step 2: Process cilantro, next 9 ingredients, and 3 tablespoons olive oil in a food processor until smooth.

Step 3: Sauté shrimp in remaining 1 tablespoon hot oil in a large skillet over medium-high heat 3 to 4 minutes or just until shrimp turn pink. Pour cilantro mixture over shrimp, stirring well. Serve shrimp mixture over hot cooked rice.
