Ingredients
1 oz Boursin Garlic & Fine Herbs Cheese
3 large eggs
1 tbs butter
1 tbs chopped chives
A handful of sour cream and onion potato chips
Salt
Pepper
Directions

1. Add 1 Tbsp. butter to a nonstick skillet and set to medium heat.

 

2. Whisk 3 eggs in a bowl until well combined. Strain through a fine mesh sieve and add to pan once butter is melted. Season with salt and pepper.

 

3. Use a rubber spatula to stir eggs constantly while simultaneously moving the skillet around in a circular motion.

 

4. Continue stirring and moving pan until eggs are nearly cooked through. Remove pan from heat and spoon about 1 ounce of Boursin Garlic and Herb into the center of the omelet.

 

5. Roll up omelet with spatula and place seam side down on a plate.

 

6. Garnish with sour cream and onion potato chips and chives.
